Snow Day Soup!

After posting about our snow day, several of you asked for a recipe for the mushroom and potato soup that I made. I would love to be able to post an exact recipe for that soup, however, I don't really cook with exact measures. This soup was actually a take off on a mushroom soup found on the Pioneer Woman's Tasty Kitchen site. If you would like that recipe you can look here. For those of you who like to fly by the seat of your pants, feel free to read on for my take on this soup. Remember, I warned you that I don't really follow recipes when I cook!!



When I heard the kitchen calling my name the other day, I got out my favorite dutch oven.



I diced up some carrots and an onion.



Then, I sauteed them in a little bit of olive oil until they looked like this.



While they were cooking, I diced up some mushrooms...



...and added them to the pot.



While the mushrooms were cooking, I diced up some potatoes. (This is where I really took a detour from the original recipe.)



When the mushrooms, onions, and carrots looked like this, I deglazed the pot with some white wine. Any white would do, but I happen to like pinot grigio.



Of course, I always pour a little for the cook...me!



After the pan is deglazed, it should look a little like this.



Next, I added the diced potatoes and salt and pepper. Don't ask me how much salt and pepper...I just guess at the right amount.



Then, I added vegetable stock. Chicken stock would probably be tastier, but I have a vegetarian in the house.



For a little twang the original recipe calls for some tomato juice. I added a small can. I just love those little cans, and the juice adds a little something special to the mix.



After all of the veggies are happily in the pot, I cover and simmer until the potatoes are cooked perfectly.



When all of the veggies are cooked through and tender, I add some cream. I used heavy cream because that was what I had on hand. Half and half would probably work great too!



All that's left to do is find a bowl and eat up!



Of course, after eating a bowl of soup on a snow day, one must follow up with homemade chocolate cookies.



Don't even ask me how to make those..........

Ah! The secret ingredient I think is the wine and cream. Must remember that. Sure looks delish!

That's MY kind of cookin'! Looks wonderful. I'll try it soon. Need to get to store for some some white and half and half first.

You have been busy in the kitchen, makes my mouth water. We had veggie soup and cornbread but nothing sweet afterwards. Your cookies would hit the spot.

All I can say is Y U M A L I C I O U S! Can I start with a cookie then have soup...then maybe a warm cookie with some cold milk? I wish you were right around the corner, I'd come visit you for some good conversation and delicious food!

I am going to try out that soup. It sounds absolutely yummy. I really like the part where the cook gets wine too. Now that is my way to cook! Chocolate chip cookies too?! What time is dinner at your house again?

Sounds yummy and easy enough to try! I had a pot of Chili and Beef Veggie soup made for the storm. They were ready in case of lost power. Camp stove and firewood were stocked as well as bird feeders. We were ready for this one. Luckily enough, the stove in the kitchen heats the soup and chili with no power loss....

Fires in the living room with snow on the ground are the best. But I must admit, 4-wheeling and making snow doughnuts looks like fun to this country gal ;-)

Oh that looks so good, I never met a soup I didnt like, and yours looks so rich and creamy.

I cook the same way...after many years of helping my Mother as a child cook for seven children. It was just about using what we had and there always seemed to be more than enough. Soup was always on the stove.
Cookies were a treat.

Yum! Yum! Double Yum!!! I don't know what it is about the cold weather but it turns me into an eating machine! Maybe next week I can make friends with my old buddy Adkins!!!

Oh! Looks so good! I'm with you on the whole cooking by the seat of the pants thing. I love to be inspired by a recipe and then do my own thing (which usually means making "do" with what I have on hand!) Not with baking of course...those chocolate chip cookies look wonderful...what did you say your recipe was?;)

If I had a cookpot like that I would probably just set on my stove and look at it. It reminds me of the red pottery that Ben Owens sells in Seagrove.

I first heard of the Pioneer Woman and her blog on Bobby Flay's Throwdown. That was a fun episode.

I should try this recipe, as I'm always on the lookout for good vegetarian recipes.
